Modern Olives is the leading advisory company of the Australian modern olive industry, covering all the aspects related with project development, technical advice and applied research. A highly qualified team with solid horticultural knowledge, extensive experience in modern olive production combined with a vast national and international olive network and continuous applied research for Australian conditions support our leadership.
The establishment of our new state of the art olive oil laboratory is another important step in order to being able to offer the best possible technical advice. Our objective is not only to provide the analytical results but also to work together with growers and associations in applied research projects trying to solve their specific needs with an integrated approach.
The modern Olives Laboratory is run by professional and experienced staff that have experience in all facets of modern olive production.
Claudia Guillaume – Laboratory Manager
Claudia finished her studies in Argentina as a Food Scientist and olive oil specialist. After working for several years in the areas of quality, authenticity and organoleptic testing in a commercial food laboratory, Claudia completed a Post Graduate course in Fats & Oils at the Fats & Oils Institute in Seville, Spain. During this course Claudia extensively studied and researched analytical techniques for oil quality, authenticity and organoleptic tests. Claudia’s work is supported by some of the most experienced technicians in the area of olive growing and olive processing.
Sonja Gwyn – Laboratory Technician
Sonja has worked for Modern Olives for the past six years. During this time she has worked in all areas of our nursery, gaining a thorough appreciation of varieties, nursery production and the olive industry. Throughout the processing season Sonja has been closely involved in the processing of our customers fruit and the sampling and testing of olive oil. Sonja is currently completing a Certificate III in Laboratory Methods and is also involved in the administration of the laboratory.
Pablo Canamasas – Laboratory Assistant
Pablo is a qualified Agronomist specialising in olive oil production and oil quality. Pablo is the manager of the largest olive oil processing plant in Australia and has attended several courses and workshops on olive oil tasting, blending and processing.
Leandro Ravetti – Technical Manager
Leandro graduated as an Agricultural Engineer in Argentina after a six-year course. Between 1996 and 2001 Leandro worked for the National Institute for Agricultural Technology specialising in olives. He has also studied and worked as an invited researcher at research institutes in Italy and Spain. In 2001 Leandro moved to Australia and during the last five years he has been providing technical advice to some of the largest olive project in Australia. In addition, Leandro conducts applied research in different areas of modern olive production.
